Baingan Gujia

Me and my family are very fond of quick food. Every time we prefer to have spicy or fast food. One day I thought of cooking something which can be categorized under 'Saatvik food'. It is one of the healthiest snacks you can have.




Preparation time : 15mins
Cooking time : 40mins
Servings : 2

Ingredients: (For 2-3 people)

Baingan (Eggplant)                  2 medium size
Onion1(chopped)
Tomato puree1/2cup
Garlic paste1tsp
Jaggery2tbsp or as required
Wheat flour2cup
Saltas required
Red chilly powderas required
Turmeric powderas required

 

Method:


For Filling:
  1. Saute garlic and onions in a pan for 2-3mins.
  2. Now, add Tomato puree and Brinjal to it and cook for 5mins.
  3. When its cooked, add jaggery, red chilly powder, turmeric powder and saute for 5-6mins.
  4. The filling is ready.

For Gujia:
  1. Form a stiff dough with wheat flour by adding salt and water as required.
  2. Divide this dough into pieces. Roll them with the help of rolling pin(about 2-3 mm thick).
  3. Stuff the filling into it and wrap as shown in the picture below.

Make as many Gujia as you want in same manner.

Now, bake these Gujia's in microwave for 20mins at 180 degree Celsius. Brush these Gujia's with oil before baking(for crispiness)

Since I like every snacks little crispy, I keep these gujia's in grill/convention mode for 5 extra minutes. You can have these Gujia's along with mint chutney or coriander-tomato chutney or even tomato sauce.
