Flat Schezwan noodles |

Ingredients
For Noodles:
All purpose flour/Maida - 1 Cup
Salt
Oil - 3 to 4 tbsp
For Vegetables:
Cabbage (Sliced) - 1/2 Cup
Onion (Sliced) - 1 Cup
Carrot (Sliced) - 1/2 Cup
Green Bell Pepper (Sliced) - 1 Cup
Soya sauce
Salt
White pepper
Ajinomoto - 1tsp
For Schezwan Sauce:
Red dry chillies - 1 Cup (inform of paste after soaking chillies for 4 to 5 hours)
Ginger - 1/2 tbsp
Garlic - 1tbsp
Vinegar
Salt
Method - How to make Flat Schezwan Noodles
For Noddles:
- Mix flour and salt to form a dough. Divide this dough into small pieces and roll each one with the rolling pin(it should be about 2-3 mm thick). Cut it into thin strips.
- Boil 4 cups of water in a bowl and add oil, salt and put this thin strips of noddles into it.
- Cook for 5-6 mins and check before you strain whether its cooked or not.
- Strain all water and keep noddles aside.
For Sauce:
- In a pan, take olive oil and add chopped ginger, garlic, salt and saute for 3-4 mins.
- Now grind the chilies and form a thick paste.
- Add this paste, while keep stirring. Add vinegar and again saute for 5-6 mins.
- Now, our Schezwan sauce is ready, this can be stored for 5-6 days in refrigerator.
Finally, in a pan, take 2-3 tbsp oil and saute all the vegetables.
Now add Noddles, Schezwan sauce (more sauce more spicy!), soya sauce, salt, white pepper and ajinomoto.
Cook it for 4-5 mins and serve hot.
