Mint & Peas Soup |

Ingredients
- 2tsp Olive oil
- 1 Onion (chopped)
- 1tsp Garlic (paste)
- Cumin powder
- Salt
- Black pepper
- Veg Stock 3-4 cups
- Nutri choice Biscuits 4-5 pieces(powdered)
- Boiled peas 1 cups
- Mint leaves
- 1tbsp Curd
- 1tbsp Olive oil
- 1 Onion
- 1 Carrots
- 1 cup Green Bell Pepper
- 1 cup Cabbage
- 2 tbsp Spring Onions
- Salt
- Fresh Parsley
- 1tsp Garlic
- 3 cup of Water
For veg stock:
- Chop all the veg. In a pan heat the oil (make sure your pan should have broad base which helps the vegetables to cook well).
- Put garlic and all the veg in oil and saute for 2 mins and then add salt, spring onion and parsley.
- Add 3-4 cups of water and let it boil for 5-10 mins on low flame.
- Strain and remove the veg from it and use this water as veg stock for the soup.
For Soup:
- In a pan, put olive oil, add onion and garlic to it and saute for 2 mins.
- Add cumin powder, salt, black pepper, biscuits powder and veg stock and boil for 2-3 mins
- Allow this to cool and then add boiled peas and mint leaves. Grind this mixture to form a thick paste.
- Take that paste in a hot pan and add little curd to it and keep it 2-3 min
- Decorate this soup with curd and serve hot.
