Mint and Peas Soup

Mint & Peas Soup
Whenever we think of soup, we think it should be healthy and tasty. So here is one of the healthiest soup which has peas, mint and biscuits. As it has Nutri choice biscuits (or Oats meal Biscuits) which is full of fibre makes the soup tasty and fat free. I have seen this recipe in Food Food channel and thought of sharing with you all.



Preparation Time - 10 mins
Cooking Time - 20 mins
Servings - 4

Ingredients
  1. 2tsp Olive oil
  2. 1 Onion (chopped)
  3. 1tsp Garlic (paste)
  4. Cumin powder
  5. Salt
  6. Black pepper
  7. Veg Stock 3-4 cups
  8. Nutri choice Biscuits 4-5 pieces(powdered)
  9. Boiled peas 1 cups
  10. Mint leaves
  11. 1tbsp Curd
For Vegetable Stock:
  1. 1tbsp Olive oil 
  2. 1 Onion
  3. 1 Carrots
  4. 1 cup Green Bell Pepper
  5. 1 cup Cabbage
  6. 2 tbsp Spring Onions 
  7. Salt 
  8. Fresh Parsley
  9. 1tsp Garlic
  10. 3 cup of Water
Method - How to make

For veg stock:

  1. Chop all the veg. In a pan heat the oil (make sure your pan should have broad base which helps the vegetables to cook well).
  2. Put garlic and all the veg in oil and saute for 2 mins and then add salt, spring onion and parsley.
  3. Add 3-4 cups of water and let it boil for 5-10 mins on low flame.
  4. Strain and remove the veg from it and use this water as veg stock for the soup.

For Soup:

  1. In a pan, put olive oil, add onion and garlic to it and saute for 2 mins.
  2. Add cumin powder, salt, black pepper, biscuits powder and veg stock and boil for 2-3 mins
  3. Allow this to cool and then add boiled peas and mint leaves. Grind this mixture to form a thick paste.
  4. Take that paste in a hot pan and add little curd to it and keep it 2-3 min
  5. Decorate this soup with curd and serve hot.
