In India, 'Chaat' is all time favorite snacks for everyone, especially for kids. One of my and my hubby's favorite is Katori Chaat. I bring you the most famous recipe from the North India called 'Katori Chaat'.



Preparation Time : 15 mins
Cooking Time : 30 mins
Servings : 6

Ingredients:(for 6 Katori chaats)

For Katori's (Base):
All purpose flour/Maida             2 cups
Oilas required for deep fry
Saltas per taste
Carom seeds1/2tsp

For Filling's:
Boiled potatoes                          2(chopped)
Dry green peas2cups(soaked and boiled)
Onions1(chopped)
Tomatoes1(chopped)
Curd2 cups
Red chilly powderas required
Chaat masalaas required
Cumin seeds powderas required
Green chilli chutney1 tbsp
Sweet imli(Tamarind) chutney1 tbsp
Sev(namkeen)as required
Black saltas required
Saltas required
Coriander leavesfor garnish

Method: How to prepare

For Katori's (Base):
  1. Mix maida, oil, salt and carom seeds to form a stiff dough.
  2. Divide the dough into small pieces. Roll each part with the help of rolling pin for about 5 mm thick sheet.
  3. Take one small bowl(deep round utensil) and grease its outer surface with butter.
  4. Now, cover the outer surface of the bowl with this sheet, gently giving it the same shape as the bowl(make sure you prick the sheet all over with the fork).
  5. In a deep frying pan, heat oil and slide the bowl(which has the maida sheet sticking around it) into it. Once it is fried, the maida sheet will leave the bowl surface, and will take the shape of the bowl. Now, remove the bowl from oil and let the katori fry till it is golden brown in color.

To make is easy, fry one Katori at a time.

For serving:
Fill each katori with boiled potaoes, green peas, onions, tomatoes, green chilli and sweet tamarind chutneys.
Top it with Curd, red chilly powder, cumin seed powder, black salt, chaat masala and salt.
And finally, garnish this 'Katori Chaat' with sev and coriander leaves.

The fillings, we have used for katori chaat can be changed according to the taste. You can also fill this katori's with sprouts(to have more healthy chaat) or chick peas.
